Beef Wellington

1 box of pie crusts
1 lb. hamburger
1 egg, beaten
1/2 bag frozen peas and carrots
2-3 stalks of celery, chopped
1/2 onion, diced
1 med. potato, diced
1/2 c. mushrooms, sliced
2 Tbsp. Rosemary
salt and pepper

Cook all veggies and spices in 1 Tbsp. oil until tender. Cool in a bowl.
Mix egg and hamburger together, add cooled veggies.
Unroll pie crusts and fill with mixture. Half of the mixture goes down the middle of each pie crust. Pull the edges of the crusts to meet in the middle and pinch closed. Brush the top crust with egg if desired.
Bake for 50-60 min. at 350 degrees.

Serve with gravy if desired
